Discover the “Niboshi Ramen,” Chef Yamada’s homage to his roots in Aomori’s Tsugaru Ramen, artfully adapted for modern tastes. This dish, steeped in the umami of dried sardines, balances tradition with inventive zest.

Chef  Tadashi Yamada

Unparalleled ramen lover. After training in several ramen restaurants in Tokyo for six years, he moved to Germany, where he spent eight years setting up two ramen restaurants and working as head chef. He then moved to Amsterdam to take on a new challenge as head chef at Fujitora.

Owner, Shin Fujita

Born in Sapporo, Hokkaido, graduated from high school and worked as a French chef.

During his 18 years of experience as a chef, he worked as head chef in Karuizawa, Hong Kong and Paris, and during his stay in France he discovered the fascination of  Japanese ramen.

He opened Fujitora to bring the wonderful Japanese ramen culture to Europe.
